Between Quito and Otavalo, at the foot of the volcano of the same name, Cayambe is a lively and pleasant small town in which to spend a few hours during your visit to Ecuador.

My suggestion

There is a local specialty which you really must try: bizcochos con queso de hojas, which are biscuits with cheese which you can buy and eat where they are made.

Try a queso en hoja (cheese wrapped in a leaf) with some local biscuits in a roadside tienda .
